Welcome or welcome back to the DailyKos Get Fit Challenge! For those new to the challenge, every Saturday midmorning we get together to review our progress towards whatever fitness goals we've set for ourselves for this year, cheer each other on, trade hints, recipes, and workout routines.
I'm a bit behind, timewise, this week, so I'll blast out a short diary here, just so folks can get started posting their weekly status updates, and keep writing, and post an updated diary in ten minutes time or so.
My New Year's weight : 286.4 lbs
My Goals for the year: 185 - 200 lbs by year's end.
My Current weight : 282.6 lbs

Alright, first off, if anyone's paying attention to my numbers, you'll notice I'm right where I was last week. Sadly, not only do elections have consequences, but so do inaugurations. Partying it up didn't gain me any weight, but it did erase the gains I otherwise was making during the week. I'm just glad I didn't gain anything :P
I binge junked out on cookies and Doritos (TM) and Scotch (Bunnahabhain), sad to say.
In a non-fitness related note, I am absolutely thrilled to see that EVERY SINGLE DAY since the inauguration, Obama has been working like a madman to erase all signs of the disastrous Bush regime policies. Every day is a celebration :)
But back to business here, another of my hoard of recipes.
Today, I'm passing along 'Persian rice' for those not philosophically opposed to carbs.
1 cup white or brown rice (I prefer brown there)
1 cup orange juice
1.5 cups water
.5 cup raisins
.25 cup slivered or chopped almonds
1-2 tablespoon olive oil
1 tablespoon chopped fresh parsley
.25 teaspoon grated orange peel/zest
Pour the olive oil in a frying pan and heat up, then add the rice, stirring over medium heat to saute til it's a bit toasty looking, say around 5 minutes. Stir in the juice, water, raisins. Cover and simmer til the liquids are absorbed and the rice has fluffed, stirring only often enough so the bottom layer doesn't burn/stick to the pan. I've had odd luck with this, so the timing might be as little as 15 min or so, or as long as half an hour. Stir in the rest of the ingredients and serve :)
Should serve 4ish ;)
